This is for a restaurant with a sommelier… and usually they come back and offer you a better bottle (better vintage, winery etc) or you can request another bottle on the list… the expectation is within reason.

I’ve def had them offer a more expensive wine to replace the wine bottle they were out of, it’s usually the same type of wine or similar and suggested by the server.
