it works because animals pathing makes them go to higher blocks. higher blocks in this case being the coop with a simple hopper connected to a barrel. it is a very slow "farm". (more to passively collect a bit of eggs when you have decorative chickens)

I personally love giving my world character over practicality. For example I have a large silo over a lake near my farm that I deposit my seeds into the top and when I need them I open the barrel at the bottom. Or building a chicken coop like this!

Hoppers can collect items through mud block. You can have a “free range” field with hidden hoppers underneath that can pick up eggs no matter where they are standing

animals do walk towards highest blocks, but not exactly! they search for a block that has least empty blocks under it. like if an area around mob has caves underground, mob would more probable walk to the space that has no or less caves under it. thats why sometimes mobs get crowded in a corner even though the farm floor is even
