They would call this Commis Chef where I’m from. A lot of chopping and prep. If you’re in charge of starters or lunchtime main courses you’re a Chef de Partie and in charge of making desserts - Pastry Chef. If you make people’s evening main courses you’re Head Chef, Sous Chef or a senior Chef de Partie that’s close to being a Sous Chef.
