Crispy Teriyaki Fish With a Secret Chinese Technique Full Recipe: Ingredients: 600-700g Barramundi or salmon Spring onion Ginger A pinch of salt White pepper 2 tbsp cooking wine Whole spices: 2 bay leaves 2 star anise 1 small cinnamon stick 1 tsp Sichuan peppercorns 1 tsp fennel seeds Leek Extra ginger slices Sauce: 4 tbsp sugar 4 tbsp soy sauce 2 tsp dark soy sauce 2 tbsp hoisin sauce 1 tsp chicken powder 2 cups water Instructions: 1 Add spring onion, ginger, salt, white pepper, and cooking wine into a bowl. 2 Squeeze the juice from the aromatics into the liquid. 3 Cut the fish into chunks and massage with the marinade for 1 minute. Marinate while preparing the sauce. 4 Heat oil in a wok. Add all the whole spices, leek, and ginger. Stir-fry over low heat until fragrant. 5 Pour in the sauce mixture. Reduce over high heat with the lid open for about 15 minutes until glossy and thick enough to coat a spoon. 6 Strain out the spices and aromatics. Set the sauce aside. 7 Remove the leek and ginger from the fish and pat the fish dry thoroughly. 8 Heat oil to 210°C. Fry the fish for 6–7 minutes over medium-high heat. Fry in batches to maintain oil temperature. 9 Raise the oil temperature to 220°C and fry everything again for 2 minutes until deeply crispy. 10 Immediately toss the hot fish into the teriyaki sauce until evenly glazed.
