Hibiscus Drink (Zobo) Recipe Ingredients • 2 cups dried hibiscus flowers (zobo) — about 100 g • 1 medium pineapple, peeled and chopped — about 500 g • 50 g fresh ginger • 2 cinnamon sticks — about 8 g • 1 tablespoon cloves — about 8 g • ½ cup granulated sugar — about 100 g, or to taste • 2 limes — about 100 g • 10 cups water — about 2.4 litres Instructions Rinse the dried hibiscus flowers thoroughly and place them in a large pot. Add the pineapple, ginger, cinnamon sticks, cloves and water. Bring everything to a boil, then reduce the heat and simmer for about 20–25 minutes. Turn off the heat and allow the mixture to cool and infuse for another 15–20 minutes. Strain the drink through a fine sieve or clean cheesecloth, pressing gently to extract the liquid. Add the sugar and freshly squeezed lime juice, then stir until completely dissolved. Taste and adjust the sweetness or lime juice to your preference. Chill thoroughly in the refrigerator and serve over ice. Tip: For a richer pineapple flavour, you can blend some of the fresh pineapple with a little water, strain it, and add the juice to the finished zobo.
