@theasiangirlthatcud: breakfast can still be tasty AND high protein!! 🥞 tofu is such an underrated food. because it’s neutral tasting, it can soak up any flavor and can be cooked into a variety of different shapes (and textures!). made these low fat, high protein vegan pancakes using silken tofu (best for desserts imo) and they did not disappoint! disclaimer: they did stick to the pan which is likely 1) user error (not enough flour?) 2) shitty pan 3) not enough oil, but let’s be honest, I also eyeballed the entire recipe. stick to it to a T and you should be good lollll Ingredients: (4 medium pancakes): 🥞150g of silken tofu 🥞60ml of milk of your choice (soy, oat, almond etc) 🥞2 tbsp of sugar (replaceable with other sweeteners, I did maple syrup— or what was left of it) 🥞1/2 tbsp of vanilla extract 🥞100g of self rising flour (can be made with 100g of flour, Itsp of baking powder, a pinch of salt) for the apple topping, I sautéed diced apples, cinnamon, maple syrup, vanilla, and a dash of water 1. In a bowl/ blender, add tofu, milk, sugar and vanilla extract Mix everything really well 2. Add self rising flour and mix well 3. In a pan, add some oil or butter 4. Cook until bubbles form 5.
