Chewy Iced Oatmeal Cookies Who else liked them better stale? 🥴 Cookies: 1 3/4 cups plus 2 tbsp all-purpose flour (235g) 1 1/2 cups quick oats, lightly pulsed (120g) 1 tsp salt 3/4 tsp baking soda 1/4 tsp baking powder 1/2 tsp ground nutmeg 2 tsp cinnamon 3/4 cup unsalted butter, softened/room temp (170g) 1 cup packed dark or light brown sugar (200g) 1/3 cup granulated sugar (75g) 1 tbsp molasses 1 large egg plus 1 egg yolk 1 tbsp vanilla extract Icing: 1 1/2 cups powdered sugar 180g 1/4-1/2 tsp vanilla 2 tbsp milk or heavy cream (For a tad bit more flavor you could add some cinnamon (The egg yolk is for a soft and chewy texture) First, pulse the oats a few times. You don’t want them to be too fine or powdery. Pulse 4-5 times. Whisk all the dry ingredients together. (Flour, pulsed oats, salt, baking soda, baking powder, cinnamon, nutmeg) Cream the butter and sugars for 2-3 minutes, just until lightened. Don’t over whip. Beat in the molasses. Mix in the egg, yolk, and vanilla until just combined. Add the dry ingredients and mix only until you no longer see streaks of flour. Chill the dough at least 2 hours. Scoop 3-4 tbsp portions Place 2-3 inches apart. Bake at 350 F for 11–12 minutes, until the edges are set but the centers still look slightly underdone. Cool the cookies down completely before dipping Make the icing by mixing the powdered sugar, vanilla, and milk until smooth. Once the cookies are cooled and slightly warm, dip the tops of each cookie into the icing. The cookies need to rest for a bit to let the icing harden. Tips -Weigh your ingredients instead of measuring by volume. -Use a light colored baking sheet for more even baking. -Bake one tray at a time. -Don’t overbake! the cookies will continue to set as they cool down. #oatmealcookies#homemade#nostalgia#baking#cookies
