Knead until smooth, about 10 minutes. Cover and let rise until doubled, about 1 hour. 2️⃣ Cook onions in a skillet until golden. Add spices, beef, cilantro, and pine nuts. Cook until beef is browned. Cool slightly. 3️⃣ Divide dough into 10 pieces, about 3 ounces/90 grams each. Fill with beef mixture, seal, and shape into buns. 4️⃣ Rest buns for 20 minutes.
