@bertha.sol: One of my favorite Mexican street food dishes are esquites, so I had to turn those same flavors into the ultimate summer pasta salad 🌽✨ Ingredients: - 1 box of elbow pasta - 2 cans whole kernel corn, drained - 2 cups mayonnaise - 1/2 cup sour cream - Juice of 1 lime - 1–2 tsp Tajín - 1/4 tsp salt (or to taste) - 1 cup crumbled queso fresco - Chopped cilantro (optional) - 1 tsp garlic powder (optional) Directions: 1. Cook the pasta according to the package directions. Drain and rinse with cold water. 2. Drain the corn. 3. In a large bowl, whisk together the mayo, sour cream, lime juice, Tajín, salt, and pepper. 4. Add the cooled pasta, corn, queso fresco, and cilantro. 5. Toss until everything is evenly coated. 6.
