@wildhavenfarm: Watermelon Jelly Ingredients: 6 cups chopped watermelon 3/4 cup bottled lemon juice 5 cups sugar 2 pouches Liquid Pectin Directions: Place watermelon in saucepan. Cover and heat gently for 5 minutes. Remove from heat. Then thoroughly crush. Pour watermelon into dampened cheese cloth lined strainer over a bowl. Let juice drip undisturbed at least 2 hours. To pot add: 2 cups strained watermelon juice, lemon juice, and sugar. Over high heat, bring mixture to a full rolling boil that cannot be stirred down. Add liquid pectin. Boil hard 1 minute, stirring constantly. Remove from heat and skim off foam, if necessary. Ladle hot jelly into hot half pint jars. Debubble. Leave 1/4" inch headspace. Clean rim of jar. Add lid and ring, fingertip tight. Add hot jars to hot water bath canner. Boil jars for 10 minutes (adjust for elevation above 1000'). Then turn off heat and remove lid for 5-10 minutes.
