SLOW COOKER BBQ CHICKEN DINNER This complete summer BBQ dinner is made entirely in the slow cooker: BBQ chicken, baked potatoes, and corn on the cob all cook together at the same time. It takes about 15 minutes to prep, won't heat up your kitchen, and dinner is ready when you are. INGREDIENTS • 2-3 lbs bone-in chicken thighs, skin removed • 1-2 tbsp BBQ seasoning • 1 cup BBQ sauce • 4 large baking potatoes • 4 ears corn on the cob, husked • Aluminum foil Optional toppings: • Butter • Sour cream • Shredded cheese • Additional BBQ sauce INSTRUCTIONS Remove the skin from the chicken thighs and place them in the bottom of a large slow cooker. Season with BBQ seasoning and drizzle with BBQ sauce. Create a second layer by laying a sheet of aluminum foil directly over the chicken. Scrub the potatoes and pierce them several times with a fork. Microwave each potato for 2½ minutes, then wrap in foil. Place the potatoes on top of the foil layer. Add the husked corn on top of the potatoes. Cover and cook on LOW for 6-8 hours or HIGH for 4-5 hours. Serve with your favorite toppings and enjoy! TIPS FOR SUCCESS ✔ Remove the skin from the chicken to prevent a rubbery texture. ✔ Bone-in chicken stays juicier during the long cooking time. ✔ The foil layer allows you to cook the main dish and sides at the same time. ✔ Giving the potatoes a head start in the microwave helps ensure the chicken, potatoes, and corn all finish cooking together. ✔ Leftover chicken is delicious, shredded onto sandwich buns with extra BBQ sauce. When we went camping, we would go out in the trails all day. We would load up an 7 quart crockpot with baked potatoes, one with corn on the cob, and one with protein. Set each one on low and cook all day. Dinner would be done when we got back to camp. Usually fed 15 people each day.

If you have refrigeration, my favorite budget summer food is "pasta salad of the week." I try to alternate between a creamy dressing and vinaigrette, but there are SO MANY good pasta salads that makes sense of what you have left over in your produce drawer. Dollar Tree pesto + mayo goes amazing with basil/mint, peas, spinach, tomatoes, and zucchini. Vibaigrettes go great with sturdy greens, anything grilled, cucumbers and melons, any herb, peppers, anything briny like tuna or pickles... Pasta salad of the week. We love it.
