@pregnancyoverforty: I got pregnant twice naturally after 40. The first pregnancy ended in miscarriage. 💔 Thankfully, I had a wise doctor who saw my natural conception as an encouraging sign—not the end of my story. She believed I could get pregnant again. She was right. 🙏🏽 Ten months later, I conceived my daughter naturally at 46, and she was born healthy when I was 47. 👶🏽💕 I know my story isn’t the norm, and I’m not promising this happens for everyone. Creamy garlic Parmesan chicken 🤌🏼 Ingredients (serves 2): For the chicken: 2 chicken breasts 1 tsp olive oil 1 tsp paprika 1 tsp oregano 1 tsp onion granules 1 tsp garlic granules Pinch of salt and pepper For the potatoes: 400g potatoes, cubed 1 tsp olive oil 1 tsp paprika 1 tsp oregano 1 tsp onion granules 1 tsp garlic granules Pinch of salt and pepper For the sauce: 3 garlic cloves, minced 200ml low fat crème fraiche 150ml chicken stock 40g light cream cheese 30g grated Parmesan 1 tsp Dijon mustard 1 tsp mixed herbs / Italian seasoning Pepper to taste Fresh parsley, chopped Served with: Tenderstem broccoli, pan fried Firstly, cut up your potatoes and season. Air fry for 30 mins on 200 degrees C, giving them a shake every 10 mins. Season your chicken and add them to the other drawer in the air fryer and cook for 20-25 mins (depending on size of chicken) at 200 degrees C. Whilst they’re cooking, make your sauce by frying off the garlic in a little olive oil. Then add your chicken stock, crème fraiche, cream cheese, Parmesan, Dijon, herbs and seasoning. Leave to simmer until bubbling, give it a taste and adjust seasoning to preference. Also pan fry your broccoli in a separate pan for 5-10 minutes.
