Cheesy Caramelised Onion & Sausage Mash Bake 😍 There’s just something about sausage & mash that instantly soothes every comfort food craving 👌🏼this one has a rich sweet onion & carrot base, cheesy mash topping (and always thick gravy for me 🤣) pure cosy dinner vibes 👌🏼  Save this for your next cosy dinner 📌 Ingredients (serves 4): For the sausage base 8 reduced-fat pork sausages (can use chicken for higher protein) 
2 large red onions, finely sliced
1 large carrot, finely diced
1 tsp chopped garlic
½ tsp dried thyme  Salt  Black pepper  1 tbsp brown sugar (can use honey) 
1 tbsp balsamic vinegar
1 tbsp Worcestershire sauce
400ml beef stock  2 tsp beef gravy granules (I use Bisto Best For the mash topping 800g Maris Piper potatoes, peeled & chopped
25g lighter butter spread (I use Flora)
120ml semi-skimmed milk 
100g reduced fat extra mature cheddar cheese  💕Add the potatoes to a large pot of cold salted water and bring to the boil.
 💕Cook for 12-15 minutes until soft. Mash with butter, milk, salt and pepper until smooth. Set aside to cool slightly. 💕Meanwhile, grill, air fry or pan fry the sausage according to packet instructions until browned and almost cooked through.  💕Slice into bite sized pieces and set aside. 
 💕Add the onions and carrot to a frying pan and cook for over medium for 10 minutes until softened and golden. 💕Preheat the oven to 200 degrees celsius (fan). 
  💕Once the veggies are soft, stir in the garlic and thyme and cook for 1 minute. 
💕Add the balsamic vinegar, Worcestershire sauce and brown sugar for 1-2 minutes to reduce slightly.
 💕Pour in the beef stock and stir through the gravy granules. Simmer for 5 minutes until slightly reduced. 💕Once thickened, add the chopped sausage into the gravy and toss to combine.  💕Spoon the mixture into a large baking dish (ideally leave to cool slightly). 💕Spread the mash evenly over the sausage mixture using a fork to spread. 💕Sprinkle over the grated cheese and transfer to the oven.
