@rhys.gard: Aussie Pub Grub Episode 51: Creamy Garlic Prawns & Rice 🍤🧄 This dish takes me straight back to my first kitchen job. I was 17, working in the local club, and creamy garlic prawns was one of the very first dishes I learnt to cook. I hadn’t made it in years, but one bite instantly transported me back. Funny how food can do that. Quick recipe: 🦐 Sear 24 prawns, then set aside. 🧅 Cook 1 diced shallot, 6 cloves of garlic and the white part of a spring onion. 🍷 Add 1 tsp Dijon mustard, deglaze with ¼ cup white wine, then stir in 300ml thickened cream and a handful of chopped parsley. Simmer until reduced and thickened. 🧀 Return the prawns, finish with a shaving of Parmigiano Reggiano and the juice of ½ a lemon. 🍚 Serve over steamed rice with extra parsley and a lemon wedge.
