One-pan festive lasagne 😍 The final Christmas recipe you’ll be seeing from me! Although who’s to say you can’t have this any time of year!? It’s a bit of a rogue dish but it’s soooo yummy and really high in protein too 👏 the recipe serves 4👇🏼 Ingredients 1/2 tbsp olive oil 500g turkey mince 1 onion, finely chopped 2 garlic cloves, minced 1 carrot, finely diced 1 celery stalk, finely diced 1 tsp dried sage 1 tsp dried thyme ½ tsp ground nutmeg 2 tbsp tomato puree 1× 400 g tin chopped tomatoes Salt + black pepper 300ml chicken stock Salt & pepper, to taste 8-10 dried lasagne sheets (200g), broken into thirds For the white sauce:⁣ 1 tbsp plain flour 1 tbsp Flora light butter 170ml semi-skimmed milk⁣ Toppings: 80 g brie 60g cooked stuffing or 20g dried stuffing mix with a splash of boiling water 1.5 tsp cranberry sauce A few thyme sprigs Method: Heat the oil in a pan and add the onion, garlic, celery and carrot. Cook for around 10-15 mins to soften, then add the turkey mince followed by the sage, thyme and nutmeg. Cook for around 8 minutes until browned. Stir in some tomato purée then pour in the chopped tomatoes, salt + pepper and the stock (stock not filmed). Stir and bring to a simmer, then spread the lasagne sheets into the pan and make sure they are all submerged in the liquid. Simmer for 15 mins, stirring regularly to keep the pasta sheets covered and to stop them from sticking together (you might need to peel some apart - I use tongs and a fork). While it’s cooking, make the white sauce by heating the butter in a saucepan over a low heat until melted. Add the flour and stir to form a paste for around 2 minutes, then pour in a bit of milk at a time (around 1/5). Whisk to combine and repeat until you’ve used up the milk or until the sauce is thin enough to pour. Pre-heat your grill to high. After 15 mins the pasta should be just cooked, simmer for another minute or two if it’s not. Pour the white sauce over, top with the brie and stuffing in small chunks and grill for a couple of mins until golden. Top with blobs of cranberry and a few thyme sprigs.
