Discard doesn’t mean you have to throw it away. You can use discard in recipes. If you keep feeding without discarding though, you’ll have entirely way too much sourdough starter unless you’re baking daily. I like to feed only small amounts unless I’m going to make a loaf. The starter I don’t use in my loaf becomes my discard and I add it to pancakes, waffles, I’ve even made cheesy crackers! My favorite sd discard recipe is The Sourdough Mom’s chocolate chip cookies! 🤤

If you don’t like waste I highly recommend keeping a tiny starter. That what I do. I maintain 30g of starter and grow it to bake with and then only keep 5g and feed to get 30g. Then she lives in my fridge until I bake again

If your starter is strong you don’t need to be keeping/maintaining that much starter. There’s a creator on here I’ve seen who keeps like a bonne maman size jar of starter in between baking and just feeds it up to the size she needs to bake with

Mine freezes when I have too much in the fridge. It’s totally fine, when you feed her again use warm (but not hot) water and she’ll thaw and bubble again!

It’s no big deal! Just like you can freeze commercial yeast, the natural yeasts will wake back up. You can even dehydrate a starter!
