Blackened Salmon with Mango Salsa and Coconut Rice🥭🥥🍣 Salmon: * salmon * olive oil * 1.5 tsp smoked paprika * 1 tsp chili powder * 1/2 tsp thyme * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp salt * 1/2 tsp pepper Mango Salsa: * 2-3 mangos depending on size * 1 red bell pepper * 1 jalapeño (optional) * Handful of cilantro * 1/4 to 1/2 a red onion * Juice of 3 limes * Garlic salt and pepper * 2 avocados Coconut rice: * 1 3/4 cup Jasmine rice (rinsed) * 1 can coconut milk * 1 1/4 cup water * 1 tsp salt * 1 tsp sugar Sriracha mayo (optional): *mayonnaise (avocado oil mayo for anti-inflammatory) *sriracha *dash of coconut aminos or soy sauce Start by preheating your oven to 425°F. Make the mango salsa and set in the fridge. For the coconut rice, place all the ingredients in your rice cooker, stir, and start it. So easy. For the salmon, mix all the seasonings together in a small bowl. Set the salmon on a cookie sheet with parchment paper. Pat it dry with a paper towel. Drizzle it with some olive oil and then sprinkle on the seasoning mixture. Drizzle with a little more olive oil. Pat it down/rub it in. Bake for 20 minutes, depending on the thickness of your salmon. Top off the bowl with the sriracha mayo if you chose to make that.
