Blueberry Lemon Chantilly Cake 🫐 🍋  This Cake is light and airy! With a little zest from the lemon! Blueberry and Lemon go perfect together so why not make this Chantilly Blueberry & Lemon cake.  Dry ingredients ✨  * 2 ¾ cups cake flour (I didn’t have any so I made some from scratch) * 1 ¾ cups granulated sugar * ½ tsp salt * 2 tsp baking powder * ½ tsp baking soda Wet ingredients 🍋   *1 cup unsalted butter, softened (8 oz / 2 sticks) * 1 ¼ cups buttermilk (or 1 ¼ cups milk + 1 tbsp white vinegar) * ⅓ cup vegetable oil * 3 large eggs * 1 tbsp lemon zest * 2 tbsp lemon juice * 1 tsp vanilla extract  Frosting 🧁  *8 oz cream cheese, softened * 8 oz mascarpone cheese (or more cream cheese if needed) * 1 cup powdered sugar (adjust to taste) * 1–2 tbsp lemon zest (key flavor!) * 1–2 tbsp fresh lemon juice * 1 tsp vanilla extract (optional but recommended) * 1 ½ cups heavy whipping cream (cold) * Pinch of salt This is how I made my cake flour!!!!measure out 2¾ cups all-purpose flour then remove 5½ tablespoons of flour. Add in 5½ tablespoons cornstarch and sift flour 2–3 times.  Preheat oven: 335°F Mix cake flour substitute, baking powder, baking soda, salt. In another bowl cream butter + sugar until fluffy. Add eggs one at a time. Mix in lemon zest, lemon juice, oil, vanilla. Alternate by  adding dry ingredients and buttermilk. Pour into 2–3 cake pans and bake for  30–35 minutes or until toothpick comes out clean.
