If you want a more authentic texture, you can totally grab store-bought wafer cookies and dip them in chocolate! BUT honestly? We like this homemade shortbread version SO much better. The buttery, crumbly shortbread layers with rich chocolate coating are absolutely incredible - and you know exactly what's going into them. They're crunchier, more flavorful, and way more impressive than anything from a wrapper. Ingredients **store bought wafer cookies or sheets will give you a more classic kit kat. If using, skip to step 8. * 1 cup all-purpose flour * ¼ cup cornstarch * ⅓ cup powdered sugar * ¼ cup unsalted butter, melted * 2-3 Tbsp milk * ½ tsp vanilla extract * ¼ tsp salt * For the Chocolate Coating: * 12 oz milk chocolate * 2 Tbsp coconut oil Directions 1. Preheat to 350°F. Line baking sheets with parchment paper. 2. In a large bowl, whisk together flour, cornstarch, powdered sugar, and salt. 3. Pour in melted butter, milk, and vanilla. Mix until a smooth dough forms. If too dry, add milk 1 teaspoon at a time. If too wet, add a little flour. 4. On a floured surface, roll the dough very thin (about ⅛ inch thick). The thinner, the crispier your wafers will be. 5. Using a sharp knife or pizza cutter, cut the dough into rectangles approximately 1 ½ x 4 inches (similar to Kit Kat finger size). 6. Place wafers on prepared baking sheets, leaving space between each piece. Bake for 12-15 minutes until edges are lightly golden and wafers are crisp. 7. Transfer to a wire rack and let cool completely. They should be very crispy when done. 8. Melt the chocolate with coconut oil until smooth. 9. Once completely cool, stack 2-3 wafers on top of each other. Brush each layer with melted chocolate to help them stick together. 10. Using a fork or dipping tool, completely coat each wafer stack in melted chocolate. Let excess drip off. Place coated Kit Kats on parchment paper.
