To understand wild bluefin tuna, you first have to see it in its natural habitat. And when you're fortunate enough to witness a scene like this firsthand, you realize you're looking at much more than a hunting moment: you're witnessing one of the great stories of the Mediterranean. What we're seeing here is wild bluefin tuna caught in the almadrabas (traditional tuna traps) at this time of year, during their migration. Tuna that arrive at the Strait after traveling thousands of kilometers, following an ancestral route that has been repeated generation after generation. There are also tuna that, after being caught, remain in marine farms to complete their fattening process. These are two different realities, and both are part of the world of bluefin tuna. But this moment belongs to the completely wild tuna: free, powerful, and guided solely by nature. And although both realities deserve respect, the complexity, texture, flavor, and emotion conveyed by a great wild bluefin tuna from the almadraba remain, for me, unmatched. Understanding that difference is also understanding an essential part of the history of tuna.
