@take2q: I’m swapping out the sugar and molasses to make a glycemic-friendly, sweet and smoky Kansas City Barbecue Sauce. I use allulose and coffee to take the place of the sugar, alongside the other classic saucy flavors. I cook it down until it's smooth, and a pinch of xanthan gum powder thickens it up to give it a glossy finish. It goes perfectly on ribs, chicken... maybe the whole state of Missouri. This is why I choose these ingredients for my Type 2 diabetic lifestyle: * Allulose: It doesn’t spike my glucose, has only 10% of the calories of sugar, and it actually caramelizes under heat, which is why I use it for barbecue. * Coffee: This adds depth and a little bit of the bitter edge that molasses usually brings, balancing the sweetness and boosting the smoky flavor. Ingredients: * 1/2 cup Strongly brewed coffee (or espresso shot) * 3/4 cup Allulose powder * 6 oz (1 can) Tomato paste * 1/2 cup Apple cider vinegar * 1 tbsp Worcestershire sauce * 1 tbsp Smoked paprika * 1 tsp Garlic powder * 1 tsp Onion powder * 1/2 tsp Black pepper * 1/2 tsp Salt * 1/4 tsp Xanthan gum How I make it: I put all the ingredients (minus the xanthan gum) into a saucepan. I cook on medium heat until a boil starts, making sure to stir frequently, then reduce the heat and simmer for 20 minutes.
