Combine 1/2 cup low sodium soy sauce, 1/3 cup water, 1 tablespoon rice vinegar, 2 teaspoons sesame oil, 2 minced garlic cloves, 1/2 teaspoon chili powder, 1/2 teaspoon ground ginger, and 2 teaspoons cornstarch. Whisk ingredients together. 4. Once chicken is cooked, add zucchini back to the pan. Reduce heat to low. Pour sauce over chicken and zucchini, stirring everything together.
