Add to a bowl. Add garlic, ginger, and fresh thyme. Set aside. Trim excess fat from oxtails. Clean with vinegar and cold water, then pat dry. Season generously with all seasonings listed above. Add brown sugar, browning, soy sauce, ketchup, and Scotch bonnet pepper sauce. Mix well and marinate for 30 minutes. Sear oxtails over medium-high heat for 2–3 minutes per side until browned. Remove and set aside. In the same pot, add your vegetables. Return oxtails to the pot. Pour in beef broth and add fresh thyme. Cover and simmer on low for about 3 hours, or until fork tender. Mix 1 tbsp cornstarch with 1 tbsp water. Add to the pot and whisk. Stir in butter beans and simmer about 5 minutes until the gravy thickens.
