The customer is in the right here. They specifically agreed it was a substitute/swap, not an additional item. When they still added the additional item to the bill, that’s a mistake. And accidentally plating items when allergies are a reality isn’t okay to begin with.

The manger at my job has done this and the table called me over cause I’m usually the one that deals with their order. I fixed literally everything, the cooks even know when a regulars order is wrong so they’ll check with me 🙃

Yeah, after it was obvious that none of them understood the situation, I would've just paid it and not left a tip (and I HATE not tipping), and probably a note that explained the $3 was EITHER the tip OR the extra side, they can figure it out.
