Cinnamon Raisin Sourdough Focaccia THIS IS AMAZING!!  Bulk fermentation took about 20 hrs due to the cinnamon in the dough. 1 tsp won’t kill the starter, but it will slow it down so be patient with it! Mine fermented overnight for 13 hrs & barely had a rise. I did another 7 hrs in the pan. Dough: 125 g active starter 375 g water 20 g honey (not necessary) 500 g bread flour 10 g salt 75 g brown sugar 1 tsp cinnamon Inclusions: 150 g raisins (I soaked mine in warm water for 30 mins) Little more brown sugar & cinnamon for the topping Mix all the dough ingredients Rest for 30-60 mins Do 1 set of stretch & folds adding in the raisins and then shape into a ball Typically I would let the dough ferment overnight for approx 12 hrs, this will take longer because of the cinnamon In a 13x9 baking dish or rimmed baking sheet, brush all over the bottom and sides with about 2 Tbsp olive oil Drop dough into dish and then flip over in the oil covering both sides Cover and let sit on the counter for 1-2 hrs or until it has puffed up to fill in the whole pan (if using a baking sheet, it will not go all the way to the sides) Once puffed up, drizzle the top with 2 Tbsp melted butter and add more brown sugar & cinnamon Dimple in all the ingredients with the tips of your fingers Bake at 425° covered with foil for 20 mins and uncovered for 15 mins or until internal temp is 200° Immediately place on wire rack and drizzle with icing  (1 cup powdered sugar, 1-2 Tbsp milk & 1/2 tsp vanilla) For more indepth instructions: www.theclevercarrot.com/2022/04/best-sourdough-focaccia-bread-recipe/ #sourdough #focaccia #Recipe #tutorials #cinnamonraisin
