Cheesy Honey Buffalo Chicken & Chorizo Rice This recipe is an absolute BANGER 🤤 creamy spiced rice, topped with honey buffalo chicken, crispy chorizo and plenty of cheese 🤌🏼 So easy to make, high in protein & proper comfort food. Add to your favs for later 📌 Ingredients (serves 4):  Rice Base 1 small white onion, diced
1 red pepper, diced 2 tsp chopped garlic  1 tsp smoked paprika

 Fresh parsley chopped 💕Heat a large, deep non-stick pan over a medium heat. Fry the diced onion and red pepper until softened. 💕Stir in the garlic, smoked paprika and chilli powder and cook for 30 seconds until fragrant. Add the tomato purée and buffalo sauce for another 30 seconds. 💕Add the rice and stir well so every grain is coated. Pour in the chicken stock, bring to a gentle simmer, then cover and cook on a medium heat for 15-16 minutes until the rice is tender and most of the liquid has been absorbed. If the rice looks a little dry before it’s fully cooked, add a small splash of water. 💕In a separate pan fry off the chorizo until crispy. Remove, leave the oils behind and keep warm.  💕Season the chicken with smoked paprika, garlic granules, salt and pepper, and add to the pan. Fry in the same pan until cooked through  💕Add the buffalo sauce and honey straight into the pan and toss everything together 💕Once the rice is cooked, stir through the cream cheese until melted. Scatter over the cheese, cover again for a couple of minutes until melted. 💕Top with the buffalo chicken and crispy chorizo, finish with chopped parsley or spring onion and serve.
