Japanese Simmered Vegetables

Ingredients
* 1 eggplant, cut into bite-sized chunks
* 2 green peppers, cut into bite-sized chunks
* 5–10 cm (2–4 inches) Japanese leek (or green onion), sliced diagonally
* 1 tsp sesame oil or vegetable oil
Seasoning
* 2 tbsp mentsuyu (2× concentrated)
* 100 ml water
* A small amount of ginger paste
* Bonito flakes (optional)

Instructions
1. Prepare the ingredients
Cut the vegetables into bite-sized chunks.
2. Sauté the vegetables
Heat the oil in a pan and cook the eggplant first. Once it becomes tender, add the green peppers and Japanese leek.
3. Simmer
Pour in the water, mentsuyu, and ginger paste. Simmer for about 5 minutes.
4. Serve
Turn off the heat while a little of the cooking liquid remains. Transfer to a plate and top with bonito flakes.
Tips
* Bonito flakes add a lot of extra flavor.
* Feel free to use your favorite vegetables.
* Thinly sliced pork is also a great addition.
