Milk doesn't spoil inside a healthy cow because the udder is a completely sealed, sterile environment. It is protected from airborne bacteria and never exposed to the outside air. Additionally, the milk contains the cow's natural immune cells, which actively fight off microorganisms. [1, 2, 3]
However, milk can go bad inside a cow if bacteria enter the teat canal, causing an infection known as mastitis. [1]
Once milk leaves the cow, it is immediately exposed to external bacteria in the environment. Because milk is rich in nutrients and sugars, these bacteria multiply rapidly at room temperature, which causes the milk to spoil. Refrigeration slows down this bacterial growth.
