Listen, family are the toughest critics mix that with them ALSO being Jamaican? It’s easier to please Gordon Ramsay than it is to please Jamaican people, especially when it comes to jerk!  Everyone always thinks I’m over reacting when I try my own food, so now you can see that I’m really a wizard in the kitchen. No gimmicks 😤  I borrowed this jerk pan from a neighbour and it definitely had seen better days, but a wire brush and a zinc metal sheet at the bottom easily solved the issue of there being no bottom because it had eroded away 💀 I literally seasoned this meat the day before my flight and was cooking it just a few hours before I was meant to leave. Then 30 mins after I finished, the heavens opened up with torrential rain😭 This was really Gods timing! I wish I got it on camera, but the gentleman that I borrowed this from was 75 years old and said he’s never tasted jerk chicken so flavoured to the bone in his life. I don’t usually care for co signs , but this one? It meant the world to me. Lastly this is a polite PSA, I’m TIRED of seeing the culture get diluted, if that protein hasn’t hit the grill with charcoal and wood at the very minimum then please stop calling it jerk. JERK isn’t the seasoning, it’s the METHOD of cooking. Don’t shoot me, I’m simply just the messenger 😙  #jerkchicken #jamaica #FoodTok #thegrubworkskitchen
