@thehungrypov: THREE ZUCCHINI QUICHE 🥒 One of the dishes from my Aperitivo & Ceramics menu. Simple ingredients, but one of the first plates to disappear. Three kinds of zucchini — green, yellow, and round — baked in a rich pecorino custard inside a flaky puff pastry. 📝 Ingredients * 1 sheet puff pastry * 1 green zucchini * 1 yellow zucchini * 1 round zucchini * 3 eggs * 200ml heavy cream * 80g Pecorino Romano, finely grated * Salt & black pepper * Olive oil * truffle Gorgonzola 👨🏻‍🍳 Method Slice the zucchinis as thinly as possible. Whisk together the eggs, cream, grated pecorino, salt, and black pepper to make the custard. Line a tart tin with the puff pastry. Arrange the zucchini slices, pour over the custard, and bake at 180°C for 35–40 minutes, until golden and just set. Finish with a drizzle of honey before serving if you like the contrast between sweet and salty.
