OK Recipe: 120g all-purpose flour, 80g whey/casein protein powder, 20g oat flour, 6g cornstarch, 4g baking powder, 2g baking soda, 2g salt. Mix with 60g light butter, 80g unsweetened applesauce, 50g nonfat Greek yogurt, 1 whole egg + 1 yolk, 50g brown sugar substitute, 30g monk fruit sweetener, and 1 tsp vanilla. Fold in 100g sugar-free chocolate chunks + 30g chopped dark chocolate. Scoop into large dough balls, chill at least 2 hours, top with extra chocolate, bake at 350°F for 10–12 min, and finish with flaky sea salt. About 170–180 cal & 12–14g protein per cookie.
