العجينة القطنيه اهم نقطتين لنجاح العجينه ١)..الماء يكون دافي لا حار ولا بارد اذا الماء حار لو بارد راح يأثر على الخميرة ٢)الخميره ضروري تكون محفوظه ب علبه محكمه الاغلاق( حتى لا يدخلها هوى) وتخلوها بمكان بارد مقادير العجينه لكل ٣ كوب طحين ٣ ملاعق حليب (هشاشه العجين تعتمد ع الحليب اذا ضفتو خمس اكواب طحين ضيفو خمسه ملاعق حليب ملعقتين شكر رشه ملح ملعقه خميره ربع كوب زيت ماء دافي ونضيف الماء بالتدريج نخلط جميع المكونات جافه ونضيف الماء بس تصير العجينه تلزك نضيف الزيت ونستمر نعجن بس تصير العجينه متماسكه ويختفي الزيت نغطيها ونحفظها بمكاني دافي
