SOURDOUGH DISCARD SCONES  One of the easiest things you can make with your sourdough discard!  Cranberry orange flavor is up today, but you can customize however you’d like. These are soooo yummy!  200g sourdough discard 1tsp orange juice  1tsp milk  1 egg 1tsp vanilla extract or paste  2 1/4c flour  1/4tsp salt  2tsp baking powder  1/2c sugar  1 stick unsalted butter, frozen/chilled, shredded  2tbsp sugar Zest from one orange  Glaze  1c powdered sugar  1tbsp orange juice 1/2tbsp orange zest  1tsp milk or more  In a small bowl, combine the 2tbsp sugar and zest from 1 orange. Set aside.  In a bowl, combine discard, orange juice, milk, egg and vanilla. Whisk well.  In a separate bowl, combine flour, baking powder, salt and sugar. Then add the cold shredded butter and crumble it in, add the orange zest sugar mixture and crumble in as well getting it nicely incorporated. Next, add in the cranberries and mix.  Add the dry to the wet mixture and mix until it’s crumbly, dump on the counter and knead until it comes together. Form into an 8in disc and cut into 8 slices. Place on a parchment lined baking tray and freeze for 20 minutes then bake at 400° for 20 minutes. Combine the glaze ingredients.  Let the scones cool for a little bit, then add the glaze and allow to fully cool and for the glazed to harden.  Enjoy!  *to make any flavor, substitute the orange juice for extra milk and remove the orange zest/sugar and cranberries. Add in whatever you’d like. Chocolate chips, lemon zest/lemon juice with poppy seeds or blueberries, etc. the possibilities are endless!
