can I ask about investing. putting money into investing does it not make more sense to put the money into a high interest saving account? investing doesn't seem to make the same amount of money?

Just been discussing this today! Investing returns is obviously better numbers wise. However, I think there is something to be said for the mental benefit of overpaying on your mortgage.

One Pan Creamy Red Pesto Chicken & Mozzarella Gnocchi  Cosy, full of flavour and all done in one pan so there’s barely any washing up 🤌🏼. Proper comfort food but still easy enough for a midweek dinner.   Ingredients (serves 4): 450g chicken breast, diced
1 tsp Italian seasoning
½ tsp garlic granules
Salt  Black pepper
1 heaped tsp chopped garlic
2 tbsp tomato puree
60g red pesto
225ml light single cream (or Elmlea light) 1 chicken stock cube crumbled
150ml hot water  2 handfuls of fresh spinach, very finely chopped 500g fresh gnocchi 80g mozzarella, grated
20g parmesan, finely grated 3-4 sprigs of fresh parsley chopped  💞Preheat the oven to 200°C fan. 💞 Add the diced chicken to a pan, season with Italian seasoning, garlic granules, salt and pepper. Fry until cooked through. Remove from the pan and set aside. 💞Lower the heat slightly and add the chopped garlic. Cook for 30 seconds until fragrant. Stir in the tomato puree and cook for 1 minute to deepen the flavour. 💞Add the red pesto and stir well. Pour in the light cream, crumble in the chicken stock cube and add the hot water (I pour my cream in jug the rinse with the hot water). Bring to a gentle simmer and allow it to thicken slightly for 2-3 minutes. 💞Stir in the finely chopped spinach and allow it to wilt into the sauce. 💞Add the gnocchi directly into the pan and stir to coat evenly. Return the cooked chicken and mix everything together. 💞Scatter over the mozzarella and parmesan, then bake for 15-18 minutes until bubbling and golden. 💞Allow to sit for 5 minutes before serving. Finish with parsley. Calories per portion: 566 l Protein: 38.77g l Fat: 21.15g l Carbs: 54.07g  • • ______ #comfortfood #easydinner #highproteinrecipe #onepanmeal #caloriedeficitmeals
