in Honduras we have a fruit with a similar kind of behavior which we call "Matasano" and I think it might be the same as White Zapote or Mexican Apple. Not sure about. But basically it has a really sweet, floral taste that combines sweet fragrance, sweet papaya plus mango in one fruit. If you pick it ripe from a tree it tastes amazing. but if you pick it green to let it ripe, it will taste still good but it will have a weird bitterness that I don't like
