Rapidly chilling freshly extracted espresso slows the chemical reactions that continue after brewing, including oxidation and the loss of volatile aromatic compounds. By reducing the temperature immediately, more of the coffee’s original flavor and aroma are preserved. In contrast, if you let hot espresso cool naturally, it spends several minutes at elevated temperatures where these reactions continue, so by the time it reaches the same temperature, it no longer tastes as fresh or vibrant.

Hi Barista here …. Pete has changed the recipe and now has us blending the syrup with the milk in a blender… we hate it lol we loved the old way which was syrup at the bottom of the espresso cup
