What I forgot to include was that in the vision where he learned the Eucharist ritual, Paul says that Jesus commanded, “Do this in remembrance of me.” Mark, as a lukewarm Pauline Christian, and Matthew, an anti-Pauline, omit this detail, while Luke includes it.

The "authentic" letters were likely written by a man by who never met Jesus but claims to have seen him in a vision. That is not a witness, but a mentally ill person imagining things and claiming they are real. Or just a liar.
