@jake_spinek: Ep. 3 of the Summer Sandwich Series: Elevated BLT Ingredients (1 sandwich): * Thick-cut bacon (4–6 slices) * 1 large ripe heirloom or beefsteak tomato * Baby romaine leaves (whole, washed and fully dried) * 2 slices sourdough bread * 1 garlic clove (for rubbing) Lemon-Chive Mayo: * 3 tbsp mayonnaise (Duke’s or Kewpie) * 1 tsp finely chopped chives * ½ tsp fresh lemon juice * Pinch of black pepper Mix and set aside. Balsamic Glaze Tomatoes: * Tomato, sliced * Light drizzle of balsamic glaze * 1 tsp olive oil * Pinch of kosher salt (light) * Fresh cracked black pepper Let sit 5-10 minutes. Lemon-Champagne Dijon Baby Romaine: * Baby romaine leaves (whole, washed and fully dried) * 1–2 tsp olive oil * ½ tsp champagne vinegar * Small squeeze of lemon juice * ⅛ tsp Dijon mustard * Small squeeze of honey (just a drizzle, not sweet-heavy) * Pinch of salt + black pepper Toss very gently just to lightly coat. Garlic-Toast Sourdough: * Toast sourdough until golden and crisp. * While hot, lightly rub with a cut garlic clove Build: 1. Cook bacon until crispy and drain. 2. Toast and garlic-rub sourdough. 3. Spread lemon-chive mayo on both slices. 4. Add bacon to bottom slice. 5. Layer balsamic-glazed tomatoes. 6. Add honey-lemon-champagne Dijon baby romaine. 7.
