Braised Beef Short Ribs, Mashed Potatoes with some Broccolini….a perfect Sunday meal with the Family. Father’s Day and the US Open on the telly, feeling blessed. Have a great week, make someone’s day every day. Recipe Below….serves 4 -2.5lb Boneless Beef Short Ribs -1 White Onion, roughly chopped -2 Celery Stalks, roughly chopped -2 Carrots, roughly chopped -3oz Tomato Paste -Cabernet Sauvignon, 1/2 bottle -3C Beef Broth, we added 2 more cups during cook -1T Peppercorns -Fresh Rosemary and Thyme -Head of Garlic, cut in half -2 Bay Leaves -2T High Heat Oil to brown beef Potatoes -4 Russet Potatoes, skin off, roughly chopped -1 Stick of Butter -1/2C Heavy Cream -Salt and Pepper as you wish **Dutch Oven, Med High Heat, add oil **Season Short Ribs with S&P, brown each side for about 2 min **Lower heat to Med. Add Onion, Carrots, Celery, cook a few minutes **Add Tomato Paste to middle, cook a few minutes and bring it together **Add Wine and cook about 5 minutes to reduce, deglaze your pot **Nestle Short Ribs back in **Add Beef Broth, Peppercorns, Rosemary, Thyme and Garlic **Cover, Oven 350 degrees, planned to go 4 hrs but 3 hrs was perfect **After 2 Hours we added more Beef Broth **After 4 Hours remove Short Ribs **Remove Bay Leaves, Rosemary, Thyme **Add some water to pot and hit with emersion blender or put all in blender **Add some butter and let the sauce simmer **Sauce Done Potatoes **Remove skin from potatoes and chop up **Add potatoes to big pot of boiling water, let it go about 20 min until fork tender **Remove potatoes, dump water **Add butter to pot, run potatoes through ricer, add heavy cream. Season w S&P **Result is light and fluffy mashed potatoes We served with some steamed broccolini.
