This recipe, however, is far from lean and takes a little longer than 15. It’s a perfect example of how time and patience reward you with depth and flavour you simply can’t achieve in a quick cook. The spices mellow and deepen, the collagen slowly melts away, and the beef becomes so tender it practically falls apart.
