1,495 kcal | 187g carbs | 108g protein | 34g fat (1) Honey Raspberry Overnight Oats
375 kcal | 54g carbs | 26g protein | 5g fat Ingredients: * 200g oats * 2 x 450g Skyr Icelandic Style Raspberry Yoghurt * 250g Fresh Raspberries * 40g Runny honey * 200ml water (or milk) * Method: 1. Add 50g oats into each container and mix with 50ml water (milk can also be used). Press into your container to form a base. 2. Add your 2 x raspberry protein yoghurts 900g total and fresh raspberries into a large mixing bowl and mix until combined. Set aside 12 raspberries for decoration. 3. Divide the yoghurt mix evenly into 4 jars or containers. Top each with 3 raspberries and a drizzle of 10g honey. 4. Seal and refrigerate overnight. Enjoy! 5. (2) Honey Mustard Chicken Pasta Salad
486 kcal | 54g carbs | 39g protein | 13g fat Ingredients: * 250g pasta * 1 red onion * 1 cucumber * 250g cherry tomatoes * 1 head (600g) of romaine lettuce * 600g diced chicken breast * 1 tin (285g) sweetcorn Dressing: * 2 tbsp (30g) dijon mustard * 1.5 tbsp (22ml) lemon juice * 3 tbsp extra virgin olive oil * 1 tbsp (15g) runny honey Method: 1. Cook your diced chicken breast (season with salt, pepper, paprika and garlic powder) and pasta. 2. Dice the cucumber, quarter the cherry tomatoes, finely slice the red onion and shred the lettuce. 3. Make the dressing by whisking together the Dijon mustard, honey, olive oil, lemon juice, salt and pepper. 4. Add your cooked and cooled pasta, chicken and then all the veg including the drained sweetcorn into a large salad bowl and pour over the dressing. 5. Toss until everything is well coated 6. Divide into 5 containers and enjoy! (3) Beef Chow Mein Stir Fry
634 kcal | 79g carbs | 43g protein | 16g fat Ingredients * 500g 5% lean beef mince * 120g baby corn * 2 packets (600g) ready-to-wok noodle * 100g spring onions * 60ml light soy sauce * 1 family bag (600g) stir fry veg * 2 packets (348g) chow mein stir fry sauce
Method: 1. Heat a wok or large frying pan on high heat. Add the beef mince and cook for 4 to 5 minutes, breaking it up as it browns. Season with salt, pepper, garlic powder and paprika. Then add 30ml light soy sauce. 2. Tip in the stir fry veg bag and sliced baby corn and stir fry for 3 to 4 minutes until just tender but still with a bit of bite. Add 1 packet of your chow mein sauce at this point. 3. Add the straight-to-wok noodles and toss everything together. 4. Pour in the second packet of chow mean sauce and 30ml light soy sauce, stir through and cook for a final 2 minutes. 5. Finish with sliced spring onions. 6. Divide into 4 containers and enjoy!
