Ingredients: * Deboned half duck * Carrot * Onion * Water * Salt & pepper * Ground cumin & fennel seeds * Oil * Wild yam (optional) * Duck fat & skin * Garlic & chilli * Star anise * Cinnamon * Orange juice * Red wine * Honey * Soy sauce Instructions: 1. Boil duck bones, carrot, onion, salt, and pepper in water for 1–1.5 hours to make the broth. 2. Rub the duck with oil, salt, pepper, cumin, and fennel seeds. Set aside. 3. Place the wild yams beside the charcoal to cook through. 4. Render the duck fat and skin into oil and cracklings. Fry the duck skin-side down until crispy, then remove the duck, cracklings, and some oil. 5. In the same pan, deglaze with broth. Add garlic, chilli, cinnamon, and star anise. Simmer, then mash and strain. Add orange juice, red wine, honey, soy sauce, and pepper, then simmer until thickened. 6. Grill the duck slowly over charcoal until cooked through. Rest, then slice. 7.
