@sophiescookingspree: Fried Eggplant with Peanut Garlic Masala Ingredients * 1 large eggplant ,sliced * 3 tbsp roasted peanuts * 3–4 garlic cloves * 3-4 red chilli (adjust to taste) * Salt, to taste * 2–3 tbsp oil * Fresh coriander, chopped Method 1. Grind the roasted peanuts, garlic, red chilli powder, and salt into a coarse mixture. 2. Slice the eggplant into rounds and lightly score the surface with a knife (optional, but it helps the masala stick and absorb better). 3. Spread the peanut-garlic masala evenly over one side of each eggplant slice. 4. Heat oil in a pan over medium heat. 5. Place the eggplant slices masala-side up in the pan. Cover and cook for 5–6 minutes until the bottom is golden. 6. Carefully flip and cook for another 3–4 minutes until the eggplant is tender and both sides are nicely browned. 7.
