Transfer to a piping bag or sandwich bag and set aside. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, egg, vanilla, and melted butter until combined. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix—the batter should still be slightly lumpy. Heat a lightly buttered non-stick pan over medium-low heat. Pour about ¼ cup of batter into the pan. Pipe a cinnamon swirl over the top of each pancake. Cook until bubbles appear on the surface and the edges begin to set, about 1–2 minutes. Carefully flip and cook for another 1–2 minutes until golden brown and cooked through.
