Heat olive oil in a large pot over medium heat. 2. Add chopped onion and sauté until translucent, about 3-4 minutes. 3. Add minced garlic and cook for another minute. 4. Stir in diced bell peppers, zucchinis, and carrots, cook for about 5 minutes until vegetables start to soften. 5. Add black beans, diced tomatoes (with juice), corn, chili powder, cumin, paprika, oregano, salt, and pepper. 6. Stir well to combine all ingredients. 7. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, stirring occasionally. 8. Taste and adjust seasoning as needed. 9.
