I am a little late to the show, and there were a lot of good comments already in here with the correct answer. The other transformers that are wired and powered most of the magnetic field is directed through the iron core, but not all of the magnetic field and since that other transformer is in proximity to other transformers, the moving magnetic field is passing over, the coils of that transformer and anytime you have a magnetic field passing through a coil of wire you’re gonna produce voltage. Basically, the magnetic fields from the transformer next to it are acting on it and creating a voltage. there is more theory and math but it is inducing a voltage. think like this, the other transformer is acting like a radio station transmitter and the untapped transformer is acting like the radio receiver in your car. the meter is seeing the signal and playing the beeps like the speakers of your car. not exactly what is going on but its a way to make it click in a way most people understand.

Im guessing its just the magnetic field of the other transformers right beside it inducing a small current over the air. Not a problem, but a phenomenon visible with the transformer unplugged.

Possibly that rather large transformer right in the same neighborhood flux is pushing some electrons through the disconnected transformer. Kinda similar to someone under huge power lines holding a fluorescent light and it faintly illuminates. dunno

I'm guessing it's that transformer adjacent to the disconnected one. It's somehow inducing voltage from the one next to it that actually is powered up.
