trimming is one of those things that's done more out of habit... then why add beef tallow or some sort of fat. I've never trimmed it comes out perfect every time 👏

I nvr trim before I smoke it. that fatty bark is trimmed off after I smoke it. then I pile it in a bowl of my pinto borracho beans.

Untrimmed keeps the moisture. Only thing is you end up with a ton of fat at the end. But definitely better than over trimming the brisket. Ideally you're somewhere in between.

I barely trim anything. And also never wrap. Comes out fire every time. 225 for about 9 hours on a 9 pound brisket. Let it rest for 3 hours after cooking.
