@platedbysimoni: Vanilla Bean Coconut Passion Fruit Cake 🍰 The cake that brings my whipped vanilla ganache and passion fruit curd together. Soft vanilla bean coconut cake layered with silky whipped vanilla ganache and bright passion fruit curd for the ultimate summer celebration cake. Ingredients Wet Ingredients 4 large eggs, room temperature 1 cup (240 ml) buttermilk, room temperature ½ cup (113 g) unsalted butter, melted and cooled ½ cup (120 ml) refined coconut oil, melted and cooled 1 tbsp vanilla bean paste 1 tbsp vanilla extract ½ tsp coconut extract Dry Ingredients 2½ cups (300 g) all-purpose flour 1¾ cups (350 g) granulated sugar 2 tsp baking powder ½ tsp baking soda ¾ tsp fine salt Instructions 1. Preheat your oven to 350°F (175°C). Grease and line two loaf pans with parchment paper. 2. In a large bowl, mix together the eggs, buttermilk, melted butter, melted coconut oil, sugar, vanilla bean paste, vanilla extract, and coconut extract until smooth. 3. To the large bowl, add in the flour, baking powder, baking soda, and salt and mix until fully combined. 4. Divide the batter evenly between the prepared loaf pans. 5. Bake at 350°F (175°C) for about 40-45 minutes. Bake until the tops are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs attached. 6. Let the cakes cool completely before slicing and assembling. Assembly - Slice each loaf cake horizontally to create four even cake layers. - Brush each layer lightly with the vanilla milk soak (milk and vanilla extract) - Spread a layer of Whipped Vanilla Ganache, followed by a layer of Passion Fruit Curd. - Repeat until all four cake layers are stacked. - Wrap the assembled cake and refrigerate for at least 1 hour (or overnight) before frosting. - Frost with the remaining whipped vanilla ganache and finish with coconut flakes. ✨ For the Whipped Vanilla Ganache and Passion Fruit Curd recipes, they are posted on my page! 😊 #baking #BakeWithMe #cake #summerdessert #cakerecipe
