@ivyskitchn: Crispy chili garlic butter udon that tastes like it took way longer than 15 minutes 🍜 Recipe 👇 🍜 14 oz udon noodles 🍄 3 cups sliced shiitake or cremini mushrooms 🥬 3 cups baby spinach 🧄 4 garlic cloves, minced 🧈 2 tbsp butter 🛢️ 1 tbsp neutral oil 🌶️ 3 tbsp CHIN-SU hot sauce (2 for the sauce, 1 to drizzle) 🍶 2 tbsp soy sauce 🦪 1 tbsp oyster sauce 🍚 1 tsp rice vinegar 🌰 1 tsp toasted sesame oil 🍬 1 tsp sugar 💧 ¾ cup water or chicken stock 🧅 2 scallions, thinly sliced ⚪ 1 tsp toasted sesame seeds 🥚 1 jammy egg 1. Heat the butter with minced garlic in a wide pan over medium-high and sear the mushrooms in a single layer until deeply golden and crisp at the edges, 4-5 minutes. 2. Add the hot sauce, soy sauce, oyster sauce, rice vinegar, sesame oil, sugar, and broth/water right into the pan and bring to a simmer. 3. Add the frozen udon into the pan and cover until cooked through, stirring occasionally (you can also boil the udon and drop it in the sauce instead if you prefer). 5. Add the spinach and toss until cooked through.. 6.
