The combination of juicy marinated chicken, fresh herbs, creamy avocado, and that peanut ginger sauce is chef's kiss. Ingredients: For the chicken: * 1 Ib chicken thighs, fat trimmed and washed * 1/4 cup low sodium soy sauce or coconut aminos * 1 tbsp minced garlic (don't be shy to add more) * 1 tbsp fresh minced ginger (add more don't be shy). * 1 tsp smoked paprika * 1/2 tsp black pepper * pinch salt * Cook: Air fry at 390°F for about 18 minutes, or until golden brown and fully cooked. Flip halfway through cooking and brush with the remaining marinade to finish. Vegetables: * Thinly sliced carrots * Cucumber * Red bell pepper * Avocado * Fresh basil (a must!) Assembly: Soften 3 rice paper sheets in warm water until pliable. I like adding a tiny bit of avocado oil to the water to help prevent sticking. Layer your vegetables, sliced chicken, and fresh basil, then wrap it all up. Peanut Ginger Sauce: * 2 tbsp peanut butter * 1 tbsp low sodium soy sauce . 2 teaspoons rice vinegar (or to taste). * 1/2 tbsp honey * 1 minced garlic clove * 1 tbsp fresh minced ginger * 2 to 3 tbsp water * Pinch of salt Mix until smooth and drizzle generously.
